  • 1 bunch of radishes

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Optional: chopped herbs such as thyme, rosemary, or parsley

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Rinse the radishes and trim off the stem and root ends. Cut the radishes in half or quarters if they are large.

  3. In a bowl, toss the radishes with the olive oil, salt, pepper, and any herbs you are using.

  4. Spread the radishes out on a baking sheet in a single layer.

  5. Roast the radishes in the oven for 15-20 minutes, or until they are fork-tender and slightly browned on the edges.

  6. Remove the radishes from the oven and let them cool for a few minutes before serving.

Roasted radishes are a great way to add some variety and flavor to your meals. The high heat of the oven brings out the natural sweetness of the radishes while also adding a nice char and smoky flavor. The radishes are also a great source of vitamin C, potassium, and fiber.

For a more complex flavor profile, you could also add some grated parmesan cheese, lemon zest or even some honey in the last 5 minutes of roasting. These roasted radishes can be paired with any meat dish or even a simple pasta, adding a burst of freshness to your plate.
