Weekly Update: September 9th


Gazpacho Recipe

Last week we had a lot of tomatoes to contend with and were interested in


trying something new. We made a batch of this Gazpacho, a chilled soup, and it was a big hit with everyone who tried it. Very refreshing and dense with interesting and vibrant flavour.


Ingredients

  • 6 large tomatoes or 1 basket of cherry tomatoes

  • 1 bell pepper

  • Half a large onion

  • 1-2 cloves of garlic

  • Parsley and/or Cilantro for flavour

  • 1 tablespoon of olive oil

  • 1 teaspoon of apple cider vinegar

  • 1 cup of cold water

Preparation

  1. Roughly chop tomatoes, pepper, onion, garlic and add to a blender

  2. Add 1 cup of cold water, a tablespoon of extra virgin olive oil, and a teaspoon of apple cider vinegar.

  3. Add in a pinch of salt and pepper and blend until the ingredients are fully integrated. Don't over-blend and cause the mixture to warm up.

  4. Serve cold or chilled and garnish with cilantro, parsley, a dash of olive oil, and some croutons

  5. Enjoy!

Remember that Friday, September 9th from 3pm until 7pm, we'll be open to the public!


We'll have our full farmers' market offering set up and can always harvest directly from the field if we run out.


Any and all are welcome to stop by to get some fresh produce, take a look at the garden, and meet the team :).




Ongoing Food Drive


Just a reminder that we're continuing our ongoing food drive. If you have the means and are interested, we welcome you to send us some non-perishable items that we can then deliver to the Food Source during our weekly trip.

Food Bank Donations


So far this season we've donated nearly 2,400 pounds of fresh produce to our local food banks. Most of our donated produce goes to Kawartha Lakes Food Source, a fantastic charitable organization that distributes to many food banks within Kawartha Lakes.
